Snowball Cookies

Makes 4 dozen cookies. Recipe is from Margaret Mannino.

1 cup butter, softened

1?3 cup sugar

½ tsp. vanilla extract

2¾ cups all-purpose flour, sifted

1 cup finely chopped pecans

About 2 lbs. confectioners’ sugar

1. Cream butter; add sugar and vanilla, beating for about 3-4 minutes.

2. Add flour; mix until dough becomes stiff, then add pecans. Mix until well blended. Roll into small 1-inch balls, place on ungreased cookie sheet. Bake at 375 degrees until golden brown, about 12-14 minutes.

3. Place confectioners’ sugar in a large bowl. Roll cookies in the confectioners’ sugar while cookies are hot. Cool cookies before storing in tin storage containers.
