Dewey says it is an original recipe of her mother-in-law, Mary Dewey Davis.
2 (4-oz.) jars whole pimentos, drained, rinsed
1/2 medium onion, grated
6 hard-cooked eggs, grated
1 lb. mild cheddar cheese, finely grated
1/2 cup mayonnaise
Juice of 1/2 lemon
Finely chopped green onion tops
Salt and pepper to taste
1. Process the pimentos and onion in a blender for 2 seconds. Do not purée. Combine with the grated eggs and cheese in a bowl.
2. Add the mayonnaise and mix until of a spreading consistency. Stir in the lemon juice and green onion tops. Season with salt and pepper.
Serve as a spread for crackers or sandwiches.
