Serve a slice of this delicious quiche with a big, green salad for a nice summer meal.

This recipe is from Claire Yeargain, who makes it with crawfish and sometimes shrimp. She likes to serve this with a green salad made with fresh strawberries, blueberries, avocado, oranges, toasted nuts, feta cheese and a poppy seed or light vinaigrette dressing.

The pie crust is partially baked then topped with saut?ed green onions, diced crawfish and dill weed. The seasoned egg and cream mixture is poured over the top and baked.
