White Chocolate Apricot Bark
Makes about 70 pieces, depending on how you cut them. Recipe is by Beth Colvin.
1 (10-oz.) pkg. white chocolate chips
2 tbls. milk, if needed
1 cup dried apricots, chopped
1. In a dry, microwave-safe bowl, microwave the chips until melted, about 2 to 3 minutes. If the chocolate is too thick, add tablespoonfuls of milk until it loosens up. You may have to microwave a bit longer.
2. Stir in chopped dried apricots. Spread the mixture on a foil-lined baking dish and refrigerate to cool.
