Walnut Buttermilk Cookies

Makes about 24 cookies, if you don’t eat all the dough. Recipe is from Beth Colvin. Store in an airtight container.

1/2 cup butter, softened

1 cup sugar

1 egg

2 tsps. vanilla

1 tbl. honey

1/2 tsp. baking soda

1/2 tsp. salt

21/2 cups all-purpose flour

1/2 cup buttermilk

1 cup walnuts, chopped

1. Cream the butter and sugar in the bowl of a stand mixer. Add the egg, vanilla and honey.

2. In a medium bowl, mix the baking soda, salt and flour. Add in small additions to the butter mixture, mixing at low speed, allowing the flour to be completely incorporated between each addition. Add the buttermilk and walnuts, mix at medium speed for 2 to 3 minutes. Stop the mixer, scrape down the paddle or beaters and the bowl, then put the dough in the refrigerator while the oven preheats. Do not leave the dough in too long or it will become dry.

3. Preheat oven to 350 degrees. Spoon cookies out onto parchment paper in rounded teaspoonfuls. Bake 9 to 12 minutes or until golden brown. Remove to a wire rack to cool.
