Serves 10 to 12.
1 lb. lean ground beef
1 medium onion, chopped
1/2 bell pepper, chopped
1/2 cup celery, chopped
1 tsp. salt or to taste
Black pepper to taste
Pinch of cayenne pepper
1 (16-oz.) can Bush’s Country Style Baked Beans, undrained
1 (15.5-oz.) can kidney beans, partially rinsed and drained
1 (16-oz.) can pinto OR black beans, lightly rinsed and drained
1-1/2 cups cooked frozen lima beans OR a can of lima beans or butterbeans
2 tbls. chili powder
2 tbls. Worcestershire sauce
1/2 cup packed brown sugar
2 tbls. yellow mustard
1/2 cup ketchup
4 strips bacon, fried crisp and crumbled, optional
1. In a Dutch oven, brown ground beef with onion, bell pepper, celery. Season with salt, black pepper and cayenne pepper. Cook until vegetables are tender. Drain off fat if necessary.
2. Add beans, chili powder, Worcestershire, brown sugar, mustard, ketchup. Taste for seasoning and correct if necessary. Spoon into 9x13-inch baking dish that has been lightly sprayed with nonstick coating. Sprinkle bacon over the top.
3. Bake in preheated 350-degree oven for about 45 minutes.
