Makes 3 cups.
1 (15-oz.) can Read Southwestern Bean Salad, drained but not rinsed (some liquid should remain)
1 medium tomato, chopped
1 small avocado, chopped
1 small jalapeño, seeded and minced
1 tbl. fresh lime juice
1/4 cup queso fresco cheese, crumbled
Dippers: Tortilla or pita chips, sliced jicama, sliced vegetables
1. In medium bowl, combine bean salad, tomato, avocado, jalapeno, and lime juice.
2. Sprinkle with cheese.
3. Serve with chips and vegetables as desired.
