Tilapia fillets are relatively inexpensive, easy to find, quick to prepare, healthful and kids generally like them because they’re tender and super mild.

This recipe took, no joke, 10 minutes and the kids raved about it. I was almost embarrassed to tell them how little preparation went into it.
The magazine from which I adapted this had a little mayonnaise and butter. I took them both out and substituted olive oil instead. I also tweaked the seasonings and added a little panko bread crumbs.
The nice thing about tilapia is that you can liberally adjust the seasonings to your taste; this fish works well with just about anything.
