Chicken and Celery Sandwiches
Makes 30. Recipe is from “The Afternoon Tea Collection” (Metro Books, Sterling Publication).
3 cups finely chopped cooked chicken
4 green onions, finely chopped
1/2 cup finely chopped roasted walnuts
3 stalks celery, trimmed, finely chopped
1/2 cup whole-egg mayonnaise
1?3 cup sour cream
20 slices white bread
10 slices wholemeal bread
1. Combine chicken, onion, nuts, celery, mayonnaise and sour cream in large bowl.
2. Spread half the chicken mixture onto half the white bread slices; top with wholemeal bread slices. Spread remaining chicken mixture onto wholemeal bread then top with remaining white bread slices. Cut crusts from bread; cut each sandwich into three fingers.
