Oysters Over Angel Hair

Serves 6. Recipe is from Marilyn Woolverton.

4 to 5 tbls. olive oil

1 cup sliced green onions

1/2 cup chopped fresh parsley

3 garlic cloves

4 cups oysters (about 2 pints)

2 tbls. fresh lemon juice

¼ cup white wine

½ tsp. salt

¼ tsp. ground red pepper

½ tsp. black pepper

1 tbl. freshly grated lemon zest

6 cups hot cooked angel hair pasta

½ cup freshly grated Parmesan cheese

1. Heat oil in a large, nonstick skillet over medium heat. Add onions, parsley and garlic, and cook 8 minutes or until tender, stirring frequently.

2. Add oysters, reduce heat, and cook 5 minutes or until edges of oysters curl. Stir in lemon juice, white wine, salt, peppers and lemon zest.

3. Add pasta and cheese, tossing well to coat.

Serve hot.
