Britainy Shaw, 25, is new to Baton Rouge but not new to baking.

“I’ve just always been watching my mom and grandma cook,” said Shaw, who moved to Louisiana in October from Texas and, before that, Montana. “I would love to open a bakery one day.”

She’s got a good start, finishing third in Southern Living’s White Cake Bake Off with her Peppermint-Hot Chocolate Cake.

When she read the contest announcement, she said, she immediately thought of her favorite Christmas flavors.

“For some reason, all I could think of was drinks,” Shaw said. “I love hot chocolate with peppermint schnapps in it.”

Her winning cake is a three-layer buttermilk chocolate cake filled with a fudgy, minty filling and frosted with a peppermint-tinged marshmallow crème frosting.

The first time she made the cake, Shaw said, it came out perfect.

“I really lucked out,” she said.

She’s since made it for her co-workers at Grand Law Firm.

She also entered Caramel Apple Cider Cake, another drink-inspired confection. Shaw said she didn’t expect either cake to win.

“I was actually sitting outside reading a Southern Living magazine when they called,” she said. “I couldn’t believe it.”

Shaw won a $500 prize for her hot chocolate cake, which can be seen on Pages 140-141 of the December double issue.

Sue Winter, of Gillette, Wyo., won first place with Mrs. Billett’s white cake, while Marilyn Boone, of Bartletsville, Okla., took second with a marbled pumpkin praline cake.
