Yields 5 quarts.

1 lb. ground or link mild Italian sausage

1 sweet onion (such as Vidalia), chopped

4 cloves garlic, minced

2 tbls. olive oil (optional)

1 bunch chopped Italian flat-leaf parsley

1 cup chopped fresh sweet basil

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 orange bell pepper, chopped

10 ozs. fresh matchstick carrots

2 lbs. fresh green beans

2 cups fresh yellow squash, diced

2 cups fresh zucchini, diced

1 cup yellow corn

1 (12-oz.) can tomato paste

3 cups fresh grape tomatoes, sliced

4 tsps. sea salt

1 tsp. red pepper flakes, to taste

Pecorino Romano cheese for topping

1. Add ground Italian sausage to bottom of a large pot with onions, garlic and olive oil and brown. (If you add a small amount of water, you do not need to add oil.)

2. Add remaining ingredients in a large pot. Add water to the remainder of the pot, leaving at least 8 inches from the top of the pot so that you can get a good boil going. Maintain boil for 1 hour uncovered. Simmer for 1 hour

Top with Pecorino Romano Cheese before serving. Serve with garlic bread.
