Desserts don’t have to be all bad for you. If you sneak a few fruits and nuts into a dessert recipe, suddenly a dish that wasn’t particularly healthful has some redeeming nutritional value.

Fruits and nuts greatly enhance this particular treat - a Fruity Spice Cake. Finely cut the apples and break walnuts or pecans into small pieces. For younger eaters, a scoop of ice-cream adds icing to the cake so to speak.

Cakes do well on High in the slow cooker, but as a result, cooking time will be shorter. Test the same way as an oven-baked cake - with a toothpick. When it comes out clean, cake is done.

Cook this one in a 3-1/2- to 4-quart round or oval slow cooker. Mixture will spread too thin in a larger 5- to 6-quart cooker. Top with a light sprinkling of powdered sugar, whipped topping or ice cream.

To remove cake, carefully loosen all edges with a silicon spatula.

Cover top with cake plate and invert so cake comes out on plate. No worries if cake does not come out intact. Just scoop into individual plates or tall martini glasses. Either way, it’s a tasty meal-ender.
