Cranberry Energy Bites

Makes about 18-20 snacks. Recipe is by Teresa B. Day.

½ cup dried dates

1/4 cup honey

1 tablespoon flax seed meal

3/4 cup rolled oats

½ cup pistachios

½ cup dried cranberries

1. Place all ingredients in a food processor. Pulse until well blended.

2. If the dough is too sticky add more honey a teaspoon at a time until desired consistency.

3. Place in a covered bowl and chill for 30 minutes.

4. Roll into balls or press into a square baking pan lined with parchment or wax paper, then cut into bars. Keep stored in an airtight bag or container in the refrigerator. Grab and go!
