Donna Montgomery reminded me of this recipe awhile back. It’s a baked rice casserole, and she says it’s one of her all-time favorites.

She mentioned that if you use vegetable spray instead of butter, it’s virtually fat free. It’s an excellent accompaniment to serve with either meat or poultry.

Onion, bell pepper and fresh mushrooms are sautéed and then mixed in with raw rice and canned French onion soup.

The mixture is placed in a casserole and baked for an hour.

While it’s baking, you can put the rest of the meal together. This dish is popular with all ages and leftovers, if you have any, reheat beautifully.
