PASTA WITH FRESH TOMATOES AND BASIL
Serves 2 to 3. Recipe is from Nancy Fourrier, of Baton Rouge.
3 or 4 cloves garlic, minced
½ cup sliced green onions
1?3 cup olive oil
4 tomatoes, peeled and chopped
1?3 cup coarsely chopped basil
1 teaspoon salt
¼ teaspoon coarse ground black pepper
½ pound angel hair pasta, cooked and drained
Fresh grated Parmesan cheese
1. Stir-fry garlic and green onions in olive oil for 1 minute. Add the tomatoes, basil, salt and pepper and cook for 2 minutes.
2. Toss with hot, freshly cooked and drained pasta. Sprinkle with Parmesan cheese and serve immediately.
Note: This dish can be doctored by adding shrimp, artichoke hearts or black olives.
