2 cups brown rice, cooked according to package instructions
1 to 2 links (16 ozs.) smoked turkey sausage OR reduced-fat smoked sausage
1/2 cup chopped Creole seasoning
1 tbl. olive oil
1 lb. ground turkey sausage
1 to 2 tsps. Tony Chachere’s Creole Seasoning OR to taste
1 to 2 tsps. McCormick’s Salt-Free All-Purpose Seasoning Blend
1. While rice is cooking, broil sausage links over high heat for about 3 to 4 minutes on each side, turning once. When done, let cool then slice into bite-sized pieces.
2. In a large sauce pan, sauté seasoning in olive oil until vegetables start to turn translucent. Add ground turkey sausage and cook until sausage is thoroughly browned and cooked through, being careful not to overcook and dry it out.
3. Add rice and link sausage pieces to ground turkey mixture and season with Tony Chachere’s and salt-free seasoning blend. Stir well to ensure all is incorporated. Taste and adjust seasonings accordingly.
Let sit for at least 10 minutes before serving to give flavors a chance to meld. Serve with green salad and French bread.
