ADVOCATE-TESTED RECIPE

Chocolate Fudge Brownies

Makes 12-16 brownies. Recipe is from Corinne Cook. These are extra good with the frosting, but if you’re short on time just dust the tops with sifted powdered sugar.

1 stick butter (8 tablespoons)

1 cup sugar

3 tablespoons cocoa

1 cup flour

2 eggs, lightly beaten

1 teaspoon vanilla

1 cup chopped pecans

1. Preheat oven to 350 F. Grease and flour (8x8-inch) baking pan. Set aside.

2. Melt butter, set aside.

3. Mix sugar, cocoa, and flour together. Add melted butter, eggs and vanilla to the dry ingredients. Stir until well mixed and add pecans.

4. Pour into greased and floured pan. Bake for 25-30 minutes.

5. Top with Chocolate Frosting below or dust with additional 2 tablespoons sifted powdered sugar when cooled.

Chocolate Frosting

1 (1-ounce) square unsweetened chocolate

1 tablespoon butter

2 cups powdered sugar

2 tablespoons milk

1 teaspoon vanilla

½ cup chopped pecans, optional

1. In heavy saucepan, melt chocolate and butter together over low heat. Stir until smooth.

2. Remove from heat. Add powdered sugar, milk, vanilla and pecans. Quickly beat until well-blended.

3. Spread over brownies.
