Mixed Veggie Medley

Serves 4 to 6. Recipe is by Julie Kay.

1½ cups fresh okra, sliced

3 fresh ears corn, cut off the cob

1 large eggplant, peeled and cut into cubes

2 stalks celery

1 large onion, chopped

1 (28-oz.) can stewed tomatoes

1 tsp. basil

1 tsp. Italian seasoning

1 tbl. black pepper

Put all ingredients into slow cooker and cook on Low for 4 to 6 hours.
