Sister Suane’s Praline Recipe

Makes about 3 dozen. Recipe is from the late Elvina “Sister” Suane Davis, of New Orleans. Her children share this recipe with grandchildren and great-grandchildren.

2 cups white sugar

2 (12-oz.) cans evaporated milk

½ stick margarine or butter

6 tbls. vanilla extract

1 cup pecans

1. Place sugar and evaporated milk into a heavy five-quart pot on medium heat and stir. Bring to a boil, stirring occasionally. As mixture continues to boil, stir slowly until softball (240 degrees) is reached. It may take 30 to 40 minutes. Add margarine or butter, vanilla and pecans. Mix briskly on low fire for 5 minutes, then keep mixing with no heat until you see the mixture getting stiff.

2. Spoon onto wax paper. Tip: place newspaper under the wax paper. Let cool.
