Toni Shinabery has been enjoying life in her retirement. When we met at a luncheon a few months ago, she told me about a slow-cooker recipe she had made and gotten rave reviews on. Of course, I asked for the recipe.

It’s a really refreshing and different taco recipe. For those of you who don’t care for cilantro, try parsley sprigs. Look for a sale on boneless pork and stock up. This will be one you’ll want to make again.

Since pork tends to leave a great amount of fat as it cooks, I typically recommend draining just before serving. Since this one is cooked with salsa, you will have to be a bit more careful with the draining process.

Remove the pork and shred. Using a slotted spoon, scoop out some of the liquid with salsa before mixing with the pork and filling tacos. Throw out remaining liquid in slow cooker.
