Baby Arugula and Strawberry Salad
Serves 6. Recipe is from the Red Stick Farmers Market.
2?3 cup toasted pecans
1 pint strawberries, quartered
1/4 cup chopped green onions
12 red radishes, thinly sliced
1/4 cup cider vinegar
2 tablespoons orange juice
1/4 cup olive oil
4 cups baby arugula
Salt and freshly ground black pepper, to taste
1. Toss pecans, strawberries, green onions and radishes in a bowl. Set aside.
2. In a saucepan, combine the vinegar and orange juice; bring this mixture to a boil over medium-high heat. Reduce the heat to medium and simmer for about 3 to 5 minutes until reduced slightly.
3. Pour the reduced juice into a serving bowl and whisk in the oil a little at a time.
4. Add the strawberry mixture, then toss with arugula leaves. Add salt and pepper to taste and serve.
