Bananas Foster Sundaes

Makes 4. Recipe is by Cynthia Nobles.

6 tablespoons butter, cut into bits

½ cup light brown sugar

¼ cup honey

¼ teaspoon cinnamon

1?8 teaspoon freshly grated nutmeg

4 small or 3 large, firm-ripe bananas, peeled and cut into ½-inch slices

½ teaspoon pure vanilla extract

2 tablespoons banana liqueur

1-2 tablespoons dark rum (depending on how boozy-tasting you want it)

1 quart Vanilla Bean Ice Cream

Chopped pecans

1. In a large saucepan, melt butter over medium heat. Stir in brown sugar, honey, cinnamon and nutmeg and cook just until sugar is totally dissolved.

2. Raise heat to medium-high, add bananas and stir until heated through, about 30-45 seconds. Remove pan from heat and carefully stir in vanilla, banana liqueur and rum. Be careful, mixture will bubble up.

3. Place a large scoop of ice cream in a dessert bowl and top with warm bananas, sauce and pecans. Serve immediately.
