Sautéed Mahi Mahi
Serves 4. Recipe is from Teresa B. Day.
1/2 cup coconut oil
4 filets of mahi mahi
Sea salt and black pepper to taste
1 teaspoon cumin
Melt the coconut oil over medium high heat. Pat the filets dry and season with salt, pepper and cumin. Place into the hot oil and left cook for 4 to 5 minutes, depending on how thick the filets are. Turn gently and cook another 3 to 4 minutes. Serve warm with cilantro pesto.
