Whipped Sweet Potatoes

Serves 12. Serving size: ½ cup

4 large sweet potatoes, peeled and diced into 2-inch pieces

12 ounces plain, nonfat or 2 percent Greek yogurt

¼ cup pure maple syrup

¼ cup light brown sugar

2 tablespoons trans-fat free margarine

½ teaspoon ground cinnamon

Salt and pepper to taste

½ cup chopped pecans

1. Steam the sweet potatoes over boiling water until fork tender (about 15 minutes).

2. While potatoes are steaming, combine yogurt and maple syrup. Place the steamed sweet potatoes, maple yogurt (except for 2 tablespoons), brown sugar, margarine and cinnamon in a food processor or blender and process until smooth.

3. Season the potatoes with salt and pepper as desired. Top the potatoes with the remaining maple yogurt mixture and nuts if desired.
