Makes about 2-1/2 to 3 cups. Recipe can easily be halved.
2 large Vidalia onions, diced
1/2 cup sugar
1 cup cider vinegar
2 cups water
1/2 cup Hellmann’s mayonnaise
1 tsp. dill weed
Freshly ground black pepper
Keebler Club Crackers, rectangular ones
1. Peel and chop onions. In glass bowl, stir together sugar, cider vinegar and water. Stir until sugar dissolves. Add the chopped onion. Cover well and marinate overnight in refrigerator.
2. When ready to serve, drain well and mix onions with mayonnaise, dill weed and black pepper. Serve on Keebler Club Crackers as an appetizer.
