Yields 2 wraps, 6 pieces each.
2 tbls. fat-free cream cheese, softened
2 (8-inch) whole-wheat tortillas
2 medium carrots, finely shredded
1/2 cup spinach leaves
1/4 cup slivered almonds
2 tbls. reduced-fat, shredded cheddar cheese
1. Spread cream cheese onto tortillas. Top with remaining ingredients.
2. Roll up tortillas tightly; wrap in plastic wrap and refrigerate for 30 minutes.
3. Unwrap roll-ups; cut each into 6 pieces.
Serve with salsa for dipping. (optional)
