Yields about 3 cups, approximately 10 servings. Recipe is from the Florida Department of Citrus.
2 (15-oz) cans garbanzo beans, drained
1 cup 100 percent orange juice
1 cup canned artichoke hearts, drained
2 tbls. extra virgin olive oil
2 tbls. fresh lemon juice
2 cloves garlic
1 tsp. coarse salt
1 tsp. black pepper
2 tbls. minced fresh parsley, optional
Pita chips, for serving
Fresh vegetables such as pea pods, baby carrots and bell pepper, for serving
1. In food processor bowl, combine all ingredients except parsley. Process until smooth, stopping and scraping sides of bowl several times.
2. Place in serving bowl and sprinkle with parsley, if desired. Serve with pita chips and assorted fresh vegetables.
