Buttered Parmesan Pasta
Serves 4. Recipe by Teresa B. Day.
8 ounces angel hair noodles
4 tablespoons butter
2 tablespoons milk
1 cup Parmesan cheese, grated
1/2 teaspoon Kosher salt
1/2 teaspoon freshly cracked black pepper
1/4 teaspoon fresh red pepper flakes
1 heaping tablespoon fresh parsley, chopped
1. Cook pasta in large pot of boiling, salted water, stirring occasionally, for about 5 minutes or until al dente.
2. Drain the pasta, reserving 1/2 cup of the pasta water. Add butter to the still warm pot and melt over low heat. Whisk in milk. Turn off heat and return noodles to the pot and toss to coat.
3. Add grated Parmesan cheese and 1/4 cup of pasta water at time as needed. Season with kosher salt and pepper, red pepper flakes and parsley. Serve immediately.
