Banana Rum Spice Cake

Makes one (9x13-inch) cake. Recipe is by Beth Colvin.

1 (18.25-oz.) box spice cake mix (I like Duncan Hines Signature Spice Cake)

2 bananas, well mashed

1/2 tsp. baking powder

1?3 cup dark rum

2?3 cup water

1/2 cup egg substitute or 2 whole eggs, beaten

1 (16-oz.) carton of cream cheese frosting

1. Put the cake mix in a large mixing bowl. Using a fork, break up any clumps.

2. Add the mashed banana, baking powder, rum, water and eggs. Stir until well combined, then pour into a greased 9x13-inch pan.

3. Bake at 350 degrees for 40 to 50 minutes, or until a toothpick in the middle comes out clean.

4. Put the frosting in the mixing bowl of a stand mixer. Using the whisk attachment, whip until fluffy. Spread over cooled cake.
