2 lbs. ground beef, or a combination of ground beef and ground pork
1-1/2 cups bread crumbs or 1 cup rolled oats
1 cup milk or tomato sauce
2/3 cup finely chopped onion
1/3 cup diced bell pepper
1 clove garlic, pressed
1/4 tsp. Worcestershire sauce
1/4 tsp. cayenne pepper
Salt and pepper to taste
1/3 cup ketchup
1. Preheat oven to 350 degrees.
2. In a large bowl, combine ground meat with eggs and mix with hands until well blended. Add bread crumbs or oats, along with milk or tomato sauce. Mix well. Work in onion, bell pepper, garlic, Worcestershire sauce, cayenne, salt and pepper. Mixture will be thick and hold together easily. (If mixture seems too soft, add more bread crumbs).
3. Shape the mixture into a firm, oval-shaped loaf. Place the loaf in a baking dish and bake for 45 minutes.
4. Carefully spoon the ketchup over the center of the loaf and continue baking for 15 minutes. Remove from oven and let stand 10 minutes before slicing.
