Baked Chicken with Basil, Garlic and Lemon OR Baked Chicken with Thyme, Garlic and Lemon
Serves 4 to 6. Recipe is by Corinne Cook.
1 (3½-lb. fryer)
1 handful fresh basil or thyme
3 tbls, butter, room temperature
3 cloves garlic, thinly sliced
I tsp. lemon zest and juice from ½ lemon
Salt, black pepper and cayenne pepper to taste
Additional butter and oil
1. Place additional herbs in cavity if desired.
Note: Bake on bed of celery, bell pepper and onions if desired
1. Prepare according to directions above.
