Christmas Curry Powder

2 dried red chilies

2 teaspoons coriander seeds

2 teaspoons cumin seeds

1 teaspoon mace

½ teaspoon black mustard seed

½ teaspoon yellow mustard seed

1 teaspoon cardamom seed

8 cloves

½ cinnamon stick

1 teaspoon ground ginger

1 teaspoon ground turmeric

1 teaspoon ground fenugreek

1. Dry roast the whole spices in a skillet on medium heat, stirring frequently, until lightly browned. Make sure the room is well-ventilated, as you do not want to breathe in the fumes.

2. Pulverize roasted spices in batches using a coffee grinder.

3. Blend all the ingredients together in a bowl. Store in an airtight container.
