Serves 4. Recipe is from the Wonderbag and Knorr booklet, “A Recipe for Change.”
8 chicken drumsticks
3 (14-oz.) cans diced tomatoes, undrained, or favorite chunky tomato sauce
1 cup sliced black olives
2 tbls. capers
½ cup Knorr Chicken Stock or Knorr Home Style Stock
Cooked pasta or other grain of choice
Shredded Parmesan cheese, optional
1. Put drumsticks, tomatoes, olives, capers and stock in a pot. Bring sauce to a gentle boil, then reduce to medium-low and simmer 15 minutes.
2. Place your lidded pot in the Wonderbag. You can leave it to cook all day. (It’s done after 2 hours. It falls off the bone after 8 plus hours.)
3. Serve over pasta or any grain of choice.
4. Garnish with shredded Parmesan cheese as an optional extra.
Note: I cooked the mixture on the stove top for 45 minutes rather than recipe’s 15 minutes, primarily due to the drumsticks still being partially frozen at the onset of the cooking process.
