1 (10-oz.) bag bean sprouts
1 (10-oz.) cup matchstick carrots
1 (10-oz.) bag coleslaw mix
3 navel oranges, peeled and quartered
1 head Romaine lettuce, washed and torn into bite-sized pieces
2 cups unsalted peanuts or cashews
2 bunches chopped fresh cilantro
2 cups edamame
3 (8-oz.) cans sliced water chestnuts
3/4 cup finely chopped purple onion
Fried wonton strips
1 (12-oz.) bottle Paul Newman’s Sesame Ginger salad dressing
Rice noodles or Udon noodles, prepared according to package directions, for serving, optional
1. In a large salad bowl, layer ingredients, beginning with bean sprouts and ending with purple onion. Top with fried wonton strips.
Just before serving, toss with dressing. Serve atop rice noodle or udon noodles if desired.
