Tomato Basil Chicken
Yields 4 chicken breasts. Recipe is by Teresa B. Day. This was tested with the tomato sauce recipe published in the May 7 issue. You can find it at theadvocate.com or use your favorite tomato sauce recipe or brand.
4 boneless, skinless chicken breasts
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
1/2 cup chicken broth
1 cup tomato sauce
1/4 cup fresh cut basil
1/2 cup goat cheese
1. Preheat the oven to 350 F. Dry the chicken breasts and season each side with salt, pepper, garlic powder and Italian seasoning. Heat the olive oil in a heavy skillet over medium high heat. Once hot, add the chicken breasts and cook until browned, around 3 to 5 minutes on each side.
2. Reduce the heat, add the chicken broth to the pan. Remove from heat. Pour the tomato sauce over the chicken. Cover the skillet with aluminum foil and bake for 30 minutes, or until a meat thermometer reads 165 degrees and the juices run clear. Remove the pan from the oven, uncover, and allow to rest for 2 minutes.
3. Top with the fresh basil and cheese. Serve immediately on its own or over Buttered Parmesan Pasta.
