Serves 4 to 6 as an appetizer.

1 cup watermelon pur?e

1/2 cup fresh lime juice

1 tbl. fresh lemon juice

1 tbl. premium vodka (optional)

1/8 cup minced fresh parsley

1 tbl. minced fresh chives

Salt and pepper, to taste

1 lb. sushi-grade fresh sea scallops

1. Mix together all of the ingredients except the scallops and place in a glass serving bowl.

2. Slice the scallops into 1/4-inch thick “coins” and drop into the dressing. Cover and refrigerate 2 hours and serve with rice crackers or crispy flatbread.
