Low-Sugar Peach Topping for Ice Cream

Makes 1 cup. Recipe is by Kathy Sansovich, of Baton Rouge.

2 tbls. Smart Balance buttery spread, or unsalted butter

1 cup peeled fresh peaches, sliced, or frozen sliced peaches, thawed

¼ tsp. cinnamon

3 tbls. low-sugar or fruit juice-sweetened fruit spread, jam or jelly (any kind)

Vanilla Bean ice cream for serving

1. Melt butter spread over medium-high heat in a small sauté pan and stir in peaches. Sauté until a little limp, about 1 minute.

2. Stir in cinnamon and fruit spread and sauté until peaches are soft and liquid is mostly evaporated and thick, about 5 more minutes, stirring often. If mixture is not liquid enough, add more butter spread or fruit spread. Allow to cool a few minutes and serve warm over vanilla bean ice cream.
