Chopped fresh spinach is stirred into these eggy cheese puffs. They are nice to serve with a bowl of hot soup on these cold days.

This pastry is similar to cream puff pastry, but more flavorful with the added Parmigiano. Reggiano cheese and spinach. The recipe makes about 36 puffs and they are fine to keep at room temperature for one day.

If you know that they will not all be eaten right away, you should freeze them. They can be reheated.
