Serves 6.

1 pint grape or cherry tomatoes

1/4 cup red onion, chopped

1 jalapeño pepper, seeded and chopped

1 yellow bell pepper, seeded and chopped

1 clove minced garlic

1 tbl. chopped fresh cilantro

1 tbl. fresh lime juice

Salt and pepper to taste

1. Chop the tomatoes and place them into a large mixing bowl.

2. Add in the chopped onions, jalapeño peppers, yellow peppers and garlic.

3. Season with the chopped cilantro, lime juice and salt and pepper. Cover and chill.

Serve on top of the chilled avocado soup.
