Mango and Black Bean Salad

Makes 6-8 servings. Recipe is by Cynthia L. Nobles.

1?3 cup finely chopped red onion

1 jalapeño pepper, seeded, ribs removed and minced

Juice of 1 lime

¼ cup olive oil

1 clove garlic, finely minced

2 tablespoons vinegar (any kind)

2 tablespoons minced fresh cilantro

1 teaspoon salt

½ teaspoon ground black pepper

½ teaspoon ground cumin

2 (15-ounce) cans black beans, drained and rinsed

1 ripe mango, peeled and chopped into ½-inch dice

1. Make a dressing by combining everything except black beans and mango in a pint jar. Cover and shake well.

2. Add beans and mango to a large bowl. Stir in dressing, cover and refrigerate 1 hour before serving.
