Apple Acorn Chicken

Serves 4 to 6. Recipe is by Julie Kay.

1 acorn squash, seeded and sliced

4 boneless, skinless chicken breasts

2 Granny Smith apples, cored and sliced

4 tablespoons brown sugar

1 teaspoon cinnamon

2 cups apple juice

1. Place acorn squash slices on bottom of slow cooker. Top with chicken breasts.

2. Add apple slices and sprinkle with brown sugar and cinnamon. Pour apple juice over all.

3. Cook on Low for 6 to 8 hours. Chicken will probably be ready closer to 6 hours.
