Serves 6.

6 (6-oz.) tilapia fillets

1/4 cup grated Parmesan cheese

2 tbls. olive oil

2 tbls. lemon juice

1 garlic clove, minced

1 tsp. minced fresh basil OR 1/4 tsp. dried basil

1/2 tsp. Tony Chachere’s Creole seasoning

2 tbls. panko bread crumbs

1. Place fillets on a broiler pan coated with cooking spray.

2. In a small bowl, combine the next six ingredients and spread over fillets. Top with sprinkles of panko.

3. Broil 3 to 4 inches from the heat for 10 to 12 minutes or until fish flakes easily with a fork.
