Fresh Pineapple Slices With Spicy Brown Sugar Topping

Serves 6. Recipe is by Corinne Cook, who says, “I have a cutter that removes the core and outside shell of the pineapple at the same time, so I cut my pineapple into 6 or 8 round slices. If you don’t have one of those cutters, simply peel and core the pineapple and cut into strips or large chunks.”

1 large, fresh pineapple, peeled, cored and cut into desired size pieces

1?3 cup brown sugar, packed

2 tablespoons apple cider vinegar

1 teaspoon ground ginger

½ teaspoon dried sweet basil

1. Place oven rack on second level from the top. Preheat oven to broil. Peel and core pineapple and cut into desired strips or chunks. Place prepared pineapple in shallow baking dish or pan. Set aside.

2. In small saucepan, combine brown sugar, vinegar, ginger and dried basil. Bring to a boil, while constantly stirring, until all sugar is melted.

3. Add ginger and basil and remove from heat. Pour sauce over pineapple.

4. Broil until pineapple is heated through and slightly browned on top. Serve at room temperature.
