Serves 6. This easy-to-make chili can be made with ground beef or ground venison. Recipe is by Corinne Cook. Chili is very forgiving so add more tomatoes or seasoning as desired.
2 pounds ground beef or venison
1 onion, chopped
1 or 2 cloves garlic, minced
½ teaspoon oregano
½ teaspoon cumin
1½ tablespoons chili powder
1 (10-ounce) can RoTel Original Diced Tomatoes & Green Chilies
1 (8-ounce) can tomato sauce
1 cup water
Salt, black pepper and cayenne to taste
Toppings, if desired when serving chili bowl: grated cheese, sour cream, chopped green onions, crushed tortilla chips, chopped avocado
1. In Dutch oven, cook meat until no longer pink. Pour off fat.
2. Add onion, garlic, oregano, cumin, chili powder, tomatoes & green chilies and tomato sauce. Stir and add water.
3. Bring mixture to a boil, reduce to simmer, and continue to cook uncovered for 20 minutes. Taste for seasoning. Correct with more cumin, chili powder, salt or pepper if desired. Continue cooking for additional 30-40 minutes.
4. Serve over hot dogs or with toppings.
