Marinated Goat Cheese

Serves 8-10 as an appetizer. Recipe is by Amy Whitley.

1 (8-ounce) goat cheese log

½ cup olive oil

Cavender’s Greek seasoning

1 large garlic clove, minced

Fresh rosemary sprigs

Garnish (pink peppercorns, grape tomatoes, Greek olives, marinated peppers, capers, roasted garlic and fresh rosemary)

Wheat Thins or water crackers, for serving

1. Slice log of goat cheese into ??-inch rounds and arrange on serving plate. Set aside.

2. Heat olive oil, seasoning, garlic and rosemary in microwave. Pour over top of goat cheese rounds.

3. Garnish with pink peppercorns, grape tomatoes, Greek olives, marinated peppers, capers, roasted garlic and fresh rosemary. Serve with Wheat Thins or water crackers.
