Summer Tomato Sandwich
Makes 1 sandwich. Recipe is by Corinne Cook. The type of bread and ingredient amounts are up to you.
2 thin slices of good handcrafted, freshly baked bread (multigrain, white, focaccia, etc.)
2 thick slices fresh, homegrown tomato
Salt and black pepper
2 or 3 fresh basil leaves, coarsely torn
1 or 2 slices fresh mozzarella cheese
2 or 3 slices of avocado
Small handful of fresh spinach and spinach and arugula mix, rinsed, dried, stems removed
1. Lightly butter one side of each slice of bread. Place under broiler and toast lightly.
2. On buttered side of 1 sliced of bread, spread lightly with mayonnaise. Layer fresh tomato slices over mayonnaise and season to taste with salt and black pepper. Add the fresh basil pieces, fresh mozzarella slices, avocados and spinach.
3. Lightly drizzle with Balsamic vinegar and olive oil.
4. Place buttered side down of second piece of toast over the dressed spinach. Cut in half and serve.
