Like most fans of fresh salads and salsas, I’ve come to love that there are as many ways to make salsa as there are vegetables and fruits to imagine it - traditional tomato salsa, fruity salsa with cantaloupes, tomatillo salsa or veggie salsas with crisp cucumbers and tangy limes, to name just a few.
It’s beyond hot in Baton Rouge, and I’m just crazy for summer appetizers that cool my body and feed my appetite. This easy and sweet mango salsa is the perfect, refreshing dish for a hot and hungry summer day.
Among the nice things about this fruity salsa is that it is made with very few ingredients. Just toss fresh tomatoes and ripe mangoes in lime juice and cilantro. Then season to taste with salt and pepper and you have a new twist on an everyday summer classic.
Dip into this salsa with your favorite tortilla chips or just eat it with a spoon. After all, the tradition of salsa lies in its ability to be modified.
