BD Kitchen Co. sets two cooking classes

Chef Chris Dixon, of Bistro Byronz, and chef Matthew Baccari, of Parrain’s Seafood Restaurant, will teach cooking classes in August at BD Kitchen Co.

Dixon will offer a “Dinner for Two” class from 6:30 p.m. to 8:30 p.m. Aug. 26. His menu will include filet with port wine shallot sauce, mushroom and green onion risotto, watermelon and blackberry salad and caramelized banana frozen yogurt. Cost is $65 per person.

Baccari’s class, “A Touch of Home With a New York Flair,” will be held from 10:30 a.m. to 12:30 p.m. Aug. 31.

His menu will include grilled lemon fish topped with andouille and shrimp cream sauce, scallops seared with beurre blanc sauce and fingerling potatoes roasted in bone marrow. Cost is $55.

Fresina schedules cooking class

Fresina Pasta Co., located at 3458-B Drusilla Lane in Drusilla Shopping Center, has scheduled a cooking class by Bruce Slade that will feature “pesce en sacchetti di carta,” or fish in a bag.

The class will be held at 10:30 a.m. Sept. 9 and repeated at 10:30 a.m. Sept. 10. Cost is $65 per person.

The featured dish will include tilapia cooked in parchment paper with shrimp, crab meat, julienned vegetables, capers and citrus-butter sauce. Also on the menu will be pear, blue cheese and walnut salad, tomato-cheese polenta and a Café Roma martini.
