Mango Salsa

Makes 4 (1/4- to ½-cup) servings. Recipe is from Helana Brigman.

3 mangos, cut into ½-in. cubes

2 roma tomatoes, seeded and diced

2 limes, juiced

1 large handful cilantro, finely chopped

Salt and pepper, to taste

Tortilla chips, for serving

1. Cut mango into chunks and add to a bowl.

2. Chop tomatoes, remove seeds and add to bowl.

3. Squeeze fresh lime juice over mangos and tomatoes and toss with cilantro, salt and pepper. Serve with tortilla chips.
